Message sensor on the road and the dyno to compare? The only difference a dyno makes is that the cool air will not be hitting the intercoolers as hard like on the road. The fuel maps maintain the a/f ratio based on the MAS voltage. Being on the road does not increase the car's volumentric effeciency. The turbos may spool up faster because of load but that's about it.
